Forgotten Cookies: Like Biting into a Cup of Hot Chocolate
This is a lovely old fashioned recipe and these easy little meringues are melt in your mouth delicious! If a cup of hot chocolate was edible, it would be in the form of these little cookies. With a flavor profile that's perfect for Christmas, these would make a fun and unique addition to any treat plate!
EQUIPMENT
- Hand Mixer
- Parchment paper
- Portion Scoop (2 tbsp.)
INGREDIENTS
- 4 egg whites
- 1 tsp. vanilla
- 1/2 tsp. cream of tartar
- 3/4 – 1 cup sugar regular granulated sugar works fine, but superfine sugar is best. See notes. Add sugar to taste preference
- 3/4 – 1 cup mini chocolate chips add according to preference
INSTRUCTIONS
- Preheat oven to 350°F.
- Add vanilla to egg whites and beat with an electric hand mixer on high until just foamy.
- Add cream of tartar and beat on high until soft peaks form.
- Slowly add in sugar, while continuing to beat on high, until all sugar is added and tall stiff peaks have formed.
- Gently fold in the mini chocolate chips with a spatula.
- Line baking sheets with parchment paper, and portion out cookies. They don't need to be spaced out much.
- Place cookies in the oven and immediately shut off.
- "Forget" about the cookies until morning and wake up to delicate meringues in the morning!
- Store in an airtight container for a week or two (if they make it that long! They only last a few days in our home!)
