Mashed Potato Patties - Thanksgiving Leftovers


Are you faced with leftover mashed potatoes and you really don’t wish to keep serving reheated potatoes?  Yes, us too, but it’s not a problem, in fact, it can be a windfall with these Mashed Potato Patties.

Every bite of these pillowy soft loaded mashed potato patties is heavenly! Cheesy, fluffy and loaded with bacon, these simple potato patties with crisp crust are a crowd-pleaser! These will become a staple in your kitchen and you’ll be looking for any excuse to make them — not that you need one! They’re a good recipe to have on hand after holidays, too. I can’t think of a better way to use leftover mashed potatoes!

Ingredients
  • 4 cups mashed potatoes
  • 1 egg
  • 1 green onion sliced
  • 1 cup cheddar cheese grated
  • 1 cup flour
  • butter
  • salt to taste
  • black pepper to taste
  • chives for garnish if desired
Instructions
  1. Mash potatoes with a potato ricer and combine with onion, egg, cheese, flour in a large bowl
  2. Scoop up 1/3 cup of the mixture, shape into balls and roll each into flour and flattened into patties
  3. Melt butter in large skillet over medium heat
  4. Fry each patty in the skillet about 5 minutes each side until golden brown, salt, and pepper to taste
  5. Snip fresh chives with herb scissors and garnish prior to serving
